Tasting Note: Straw in colour with good acidity, fine to medium mousse, medium intense nose & a good length on the finish. This wine features: Lemon tart, peach & pear.

Interesting Note: New to LCBO stores

Winemaker’s Note: “The grapes used in this blend were picked in late September to obtain the perfect balance between acidity and sugar. The base wine was fermented cool to preserve aromatics with no malolactic fermentation done in order to maintain freshness. Secondary fermentation took place in stainless steel tanks to produce elegant bubbles. Minimum 30 days aging on lees.”

Pairings: Drink this now or in 3 – 4 years on its own or pair it with Charcuterie Board.

Winemaker’s Note: “Hand-harvested from a unique Chardonnay clonal planting in the Lincoln Lakeshore sub-appellation. Grapes were gently pressed using a long and slow press cycle. Settled juice was transferred to French oak barrels (20% new) for 10 months of aging before bottling.” Winery

Winemaker’s Note: “Sourced from our own Whitty Vineyard in Creek Shores, Sandstone, our top Gamay, is selected from new and seasoned French oak barrels after 12 months of ageing. The grapes were harvested in early October at an average of 19.5° brix. Crushed and destemmed before cold soak, followed by alcoholic fermentation and maceration in stainless steel over 30 days. Winemaker’s Note: “Grapes were harvested and loaded directly into the press. Cold juice settling and racking was followed by inoculation with non-aroma enhancing organic yeast and a cool fermentation that spanned four weeks. Negatives: 14.5% alcohol

Winemaker’s Note: “Each lot for this wine is hand harvested, whole-cluster pressed, then barrel fermented with native and cultured yeast. The wine completes 89% malolactic fermentation and is sur lee aged and stirred weekly for 5 months. The final blend was assembled in June, 2019, and the wine is barreled again in neutral oak until bottling, for a total of almost 15 months of barrel aging. All vineyard lots are treated separately until blending.”

What is Twilight Wines?

Twilight is sometimes defined as when something is approaching its end, especially in a gentle or peaceful way. Twilight is that point when we have learned the lessons we are apt to learn and have spun our last breath, and told our last tale: our twilight years. It is that moment when everything and everyone is at its finest, when the earth and all its occupants pause for just a fraction of time in anticipation of what comes next. That is the moment at which all wine should be drank and with a little insight and a lot of luck, fate will allow us the moment in which this will occur.
